Choc beetroot muffins

Ingredients

  • 1 beetroot, steamed

  • 1/2 cup almond butter

  • 2 eggs

  • 2 tbsp extra virgin olive oil

  • 1/2 cup raw cacao powder

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • 1/4 cup coconut sugar

  • 1/4 tsp salt

  • 1/3 cup dark chocolate chips

Method

  1. Preheat your oven to 180 degrees, and line a muffin pan.

  2. Add all your ingredients (except the choc chips) to a blender or food processor and blend until well combined.

  3. Mix in the chocolate chips.

  4. Scoop the mixture evenly amongst the lined muffin pan.

  5. Bake in the oven for 20 mins. Remove from the oven to cool, and transfer to a cooling rack.

  6. Enjoy!
